My last bottle of Raveneau's 2005 Chablis Grand Cru Valmur was drinking brilliantly, opening in the glass with an almost preternaturally youthful bouquet of wet stones, waxy citrus rind, oyster shell, white flowers and honeycomb. Full-bodied, satiny and layered, with a dense, concentrated core of fruit girdled by racy acids and chalky extract, it concludes with a long, mineral finish. (WK)
